Its name ("secreto" meaning "secret") comes from the fact that it was once a little-known cut, traditionally reserved by butchers. It has an irregular, flat shape and is distinguished by its intense marbling, which gives it a rich, juicy, and aromatic flavor. When cooked —typically grilled or pan-seared— the fat melts, resulting in tender, flavorful meat full of nuance.
