Spain produces more than 200 traditional cheeses and holds more than two dozen protected designations of origin and geographical indications. Exports have grown steadily for a decade: within the European Union the main destinations are France, Portugal and Germany, and the United States is the leading market outside Europe, driven above all by Manchego-style sheep's cheese.
What is selling
- Sheep's milk cheeses. Semi-cured and cured sheep's cheeses, both PDO (Castilla y León, La Mancha) and traditional, remain the flagship of Spanish cheese abroad.
- Blue cheeses. Cabrales PDO and Valdeón PGI, matured in the caves of the Picos de Europa, are finding a place on cheese counters that once stocked only French and Italian blues.
- Galician soft cheeses. Tetilla, Arzúa-Ulloa and San Simón da Costa, all PDO, appeal to buyers looking for mild, creamy cow's milk cheeses with a story.
- Blended and goat's cheeses. Versatile, competitively priced references for everyday retail ranges and foodservice.
- Flavoured specialities. Cured sheep's cheese with truffle, black garlic, Pedro Ximénez or chili is growing in premium retail and gifting.
What buyers ask for
Three questions dominate our conversations with importers: shelf life on arrival, format, and certification. Pre-cut fixed-weight wedges of 150 g to 300 g and sliced trays of 80 g to 500 g are replacing whole wheels in retail. PDO and PGI logos are increasingly used on the front of pack. IFS or BRC certification of the dairy is a condition for most European chains.
Practical advice for category buyers
- Start with a core of three to five references (a semi-cured sheep's cheese, a blue, a soft Galician cheese, a goat's cheese and a blended cheese) and extend once rotation is proven.
- Ask for the pallet configuration and shelf life per format before comparing prices per kilo.
- Plan promotional volumes with the producer; artisan dairies have finite maturing capacity.
